I can’t believe it has been nearly three years since my last taste of Meta Coffee Lab coffee, but time flies when you’re having fun! That is definitely true! Since I last featured this Lincoln, Nebraska roaster, Mike Bratty and his wife, Suzanne Seberg, have expanded their home-based operation as well as redesigned their coffee packaging from standard brown craft bags to spiffy looking zipper bags with subtle coffee-related black on charcoal dark plum print and pops of color patterns in the side panels. Very sharp! Mike and Suzanne both have full time jobs, but Meta Coffee Lab has grown to take over their basement and they appear to have come a long way since their days of riding their custom cold-brew nitro bike almost an hour to the farmers’ market every weekend (although they may still be doing that, too!).

There’s this book that Mike Bratty and his wife, Suzanne Seberg, read called, “The Lean Startup: How Today’s Entrepreneurs Use Continuous Innovation to Create Radically Successful Business.” The author advocates for startup business owners like Bratty and Seberg to take a minimalist approach to growth while creating a viable product, investing progressively but cautiously while responding to interest in what they’re selling, which, in the Lincoln couple's case, is small-batch coffee.

“And then you end up with a coffee roaster in the basement,” Bratty said.

Living full-time in Portland, Ore., for six years before returning to his home turf in Lincoln, Neb., four years ago, Mike Bratty was a curious consumer and home roaster during what was arguably American specialty coffee roasting’s biggest boom period in its biggest boomtown. It was not lost on him.

While maintaining full-time jobs in vastly different fields, Bratty and his wife Suzanne Seberg have applied their passion for coffee into a new small-batch roasting venture called Meta Coffee Lab, which aspires to expand the field of coffee in Lincoln through direct sales and wholesale relationships with some of the college town’s more forward-thinking businesses.

Meta Coffee Lab – Yirgacheffe Buna Abada

The first coffee I’m reviewing from Meta Coffee Lab is their Yirgacheffe Buna Abada from Ethiopia. “Buna Abada” means “floral coffee” in Amharic, the language of Ethiopia. Meta offered descriptors of, “Floral, citrus & stone fruit, rose water” for this coffee. At the time I wrote this review, there was not an active link to buy this coffee from Meta Coffee Lab, but I’m sure if you contact Mike and Suzanne they would be happy to help you get some of their coffee into your cup!

Tap Into The New Rage That Is Nitro Coffee

A local favorite recently introduced in 2015, Metacoffee Lab specializes in roasted beans, and can be found with their nitro-brew ready-to-go in their trike cart at Farmer’s Markets and local events around Lincoln. Fun fact, the duo first introduced Lincolnites to the rage of nitro brew iced coffee on the morning of their own wedding reception (dawww).
